Whilst exploring the Andalusian hills around Malaga, picklehead Ollie came across this local dish which he thought was truly worthy of a Sylt twist. Perota Soup is incredibly well known dish in the local area. So well known, in fact, that it has it's own weekend of celebration in the first week of October. A hearty, nutrious and vegan soup to give you a blast of traditional Spanish flavours with our trademark pickle twist thanks to Sylt Juniper and Sage Pickling Liquid.
