Pickled Apple, Peanut Butter and Banana Toast
This is quick, easy and deliciously pickly way to start your day. The type of breakfast you can make and eat on your way to the bus stop, and not feel the crushing sugar crash 30 minutes later, it's got a great balance of fuel for the day with a strong dose of fibre and even a decent whack of protein there. Use a good quality sourdough and peanut butter to make this and your gut will be thanking all day long.
