Beetroot, Plum and Walnut Salad

Beetroot is the definition of a seasonal delight which does not age well and that's exactly what makes it the perfect thing to pickle. Not only does it take on all the flavours of the pickling liquid super easily, it last ages and is an incredibly popular pickle across Europe, where they're a little ahead of us UK based pickleheads. It's a very versatile pickle, and the vegetable benefits from a pre-roasting before pickling which adds to the depth of the flavour. In the UK, you can buy ready cooked stuff which is very good but we would always encourage you to roast it yourself, it's just better. Here we've used the pickled beets with plum, walnuts and mint in a delightfullly well balanced salad. Winner winner, beetroot dinner.
