Cucumber Pickle Hummus

It doesn't feel that long ago that when it came to hummus, in the UK you had one option - slightly crappy store bought hummus. Now, there is a huge range of different options in a myriad of flavours: Red pepper hummus, roast garlic hummus, sundried tomato hummus - the list goes on.

There is one, crucial hummus which I think is missing from the shelves that thankfully, we have provided a recipe for: Pickle hummus. That's right, homemade hummus with pickles blended through. 

And you know what? It really works. A good hummus always has a bit of sharpness and the pickling liquid here really supplies that. The high liquid content of the cucumber also helps to smooth out the hummus. All told, you get left with a creamy smooth hummus with a delicious tang. Let's get into it shall we?
