Your August Pickling Guide: Cucumbers, Courgettes and the Late-Summer Glut

To our absolute joy, it's glut season. Somewhere right now, an allotment owner is staring down seventeen courgettes they definitely didn't mean to grow and wondering what on earth to do with them. Friend, we have answers.

August is peak pickling season, whether you know it yet or not. Cucumbers are cheap, plentiful, and practically begging for a Kilner jar. Courgettes are multiplying faster than anyone can eat them fresh. And if you've got a veg box, an allotment, or a very generous neighbour, you're probably already drowning in produce that won't last the week - unless you pickle it.

Here's what to reach for this month:

Cucumbers. The classic. Whether you're going full on bread-and-butter or after something sharper, our Dill & Mustard liquor turns a bag of cues into proper deli-counter pickles in about ten minutes of actual effort.

Courgettes. Sliced into thin ribbons or coins, courgettes take pickling brilliantly and turn a slightly boring vegetable into something you'll actually fight your housemates for. Try them in Balsamico & Basil for something that tastes suspiciously like it came from an Italian deli.

Beetroot. If you can get it pre-cooked (or you're brave enough to boil your own), beetroot in Juniper & Sage is a genuinely stunning colour and flavour combo — and it'll keep you going well into autumn.

The green tomatoes nobody warned you about. End-of-season tomato plants always have a few stragglers that were never going to ripen in time. Don't bin them — pickle them. They're a true hidden gem.

However you're stocking your shelf this month, the method doesn't change: Pick your veg, Prep it (slice, chop, or leave whole — your call), Plonk it in a jar, Pour over the liquor of your choice. No sterilising marathon, no faffing with vinegar ratios, no PhD in fermentation required.
