The Ultimate Vegan Sausage Roll

I'm going to say something controversial, the Gregg's sausage roll isn't actually good. It's good for how cheap it is, but it isn't actually good, especially once you realise how easy it is to make your own pastries at home. That's not the last of my controversial opinions on pastries because I've got another corker here - Vegetarian Sausage rolls, way better than meaty ones. You've got way more variation on flavours, more depth of flavour from the different combinations of veggies and they're just a lot less gross (literally, what part of a pig is sausage meat?). In fact, you could go as far as to argue you they are actually quite healthy.

This recipe is a candidate for the ultimate veggie/vegan sausage roll recipe. You have nuttiness from chestnut, umami from mushrooms and a little bit of tang from the Juniper and Sage Pickled Red Onions.

Luckily, most store bought pastries are vegan these days so its very easy to find good pastry for any dietary. If you are willing to branch into the world of dairy, you can swap out the vegan cream cheese from the animal equivalent and the vegan glaze for a regular old egg wash.
