Pickled Samphire and Crab Salad
This is crab and wild samphire salad is super fresh and makes for an incredible seasonal meal in the few months that Samphire is in season (June to September), with the added bonus of extending your time window thanks to the wonders of pickling. The pickled samphire adds a level of acidity which compliments the creamy dressed crab perfectly.
If unlike me you don't live next to a muddy estuary filled with samphire to forage, you'll almost certainly find it in the posher supermarkets.
